Avocado and Hummus Quesadillas

INGREDIENTS

  • 2 large tortillas
  • 1 avocado, sliced
  • 2-3 tablespoons hummus
  • sprinkle of cheese (vegan or non)
  • salt/pepper to taste

INSTRUCTIONS

  1. To make mini tortillas out of the bigger tortillas take a cookie cutter and make cut-outs. 2 large tortillas will give you 8. If you do not have a cookie cutter use the top of a glass cup.
  2. Spread hummus on one side of the tortilla, one piece of sliced avocado and sprinkle of cheese.
  3. Spray a fry pan with coconut oil spray or non-stick cooking spray.
  4. Fold tortillas and let cook on both sides until golden brown.

NOTES

  • Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium and potassium.  They also provide lutein, beta-carotene, and omega-3 fatty acids. 
  • Hummus is a great source of plant-based protein.  Hummus contains iron, folate, phosphorus and B vitamins, all of which are important for vegetarians and vegan.
