Black Bean Quinoa Chopped Salad

INGREDIENTS

Ingredients

    • 2 cups cooked quinoa
    • 1 can black beans, drained and rinsed
    • 1 large green bell pepper, diced
    • 1 large red bell pepper, diced
    • 2 cups cherry tomatoes, quartered
    • 1 small red onion, diced
    • A good handful of fresh parsley or cilantro leaves, chopped
    • 1 large avocado, chopped
    • 1 tablespoon olive oil or avocado oil
    • ½ teaspoon ground cumin
  • Sea salt and fresh ground pepper to taste

 

INSTRUCTIONS

Instructions:

  1. Add all the ingredients in a large bowl and very gently combine.

You can serve this immediately or place in an airtight containers and refrigerate.

NOTES

Bell peppers are excellent source of Vitamin A, Vitamin C, and potassium.  They also contain a healthy dose of fibre, folate and iron.
