Indian Spiced Lentil Soup

INGREDIENTS

Ingredients

  • 2 large onions, finely chopped
  • 2 garlic cloves, crushed
  • 4 tomatoes, coarsely chopped
  • ½tsp (2.5ml)ground turmeric
  • 1tsp (5ml) ground cumin
  • 6 cardamom pods
  • ½ cinnamon stick
  • 1 cup (250ml) red lentils, rinsed and drained
  • 3¾ cups (930ml) water
  • 410g tin lite coconut milk
  • 1Tbs (15ml) lime juice
  • Salt and freshly ground black pepper to taste
  • Cumin seeds, to garnish

INSTRUCTIONS

Instructions:

    1. Put the onions, garlic, tomatoes, turmeric, cumin, cardamom pods, cinnamon, lentils and water into a pan. Bring to the boil, reduce the heat, cover and simmer gently for 20 minutes, or until the lentils are soft.
    2. Remove the cardamom pods and cinnamon stick, and then process the mixture in a blender or food processor. Press the soup through a sieve and then return to the clean pan.
  • Reserve a little of the coconut milk for the garnish and add the remainder to the pan with the lime juice. Stir well and season with salt and pepper. Reheat the soup without boiling. Swirl in the reserved coconut milk, garnish with cumin seeds and serve.

 

NOTES

  • Use low fat / lite coconut milk to ensure a low fat value per serving.
  • There are huge benefits provided by the tomatoes and lentils when combined with spices, makes for a very nutritious yet tasty light meal.
