INGREDIENTS

  • 2 large grain free tortillas
  • ½ cup hummus
  • ½ cup cucumber, thinly sliced lengthwise
  • ½ cup lettuce of choice
  • ½ cup sliced carrots
  • Chopped veggies like (But not limited to):
    • Cherry tomatoes
    • Gherkins
    • Cilantro
    • Olives

INSTRUCTIONS

  1. Add ¼cup of hummus on each tortilla
  2. Add the sliced cucumbers and lettuce on top
  3. Add your choice of chopped veggies.

NOTES

  • Hummus is a great source of plant-based protein.  Hummus contains iron, folate, phosphorus and B vitamins, all of which are important for vegetarians and vegans.
